Created in the 80s as a spin off from a Tequila Sunrise, the Caribbean Sunset cocktail has many variations. Whatever the ingredients used the ultimate aim is to use rum and fruit to create a visually dramatic cocktail reminiscent of an intense sunset.
Instead of layering the juice on top of the cherry we have gone with a pouring technique allowing the liqueur to sink through the rum and juice mix to further bring out the sunset colours as it descends. The cocktail is garnished with a cherry infused dehydrated pineapple slice and accompamnied with air dried British biltong.
The flavours in the Devil's Bridge Rum give a different dimension to the fruit flavours; you should have some of the rum left over - give it a try in a rum pineapple upside cake for a sweet accompanyment to the cocktail. Alternatively try it on the rocks as an alternative to Scotch.
